Mint Chocolate Smoothie

This healthy smoothie tastes like a rich chocolate milkshake, and that’s no April Fool’s joke.

The creation of this recipe came about because my family loves mint chocolate anything and March seems like a mint chocolaty time of year. I was also looking for applications to use my VAIN Irish vanilla drops (vanilla extracted in Irish whiskey). I think I made 8-9 variations of this recipe before I found what I think is the perfect combination.

If fresh mint isn’t available to you, 1/4 tsp mint extract works in place of the fresh mint, or skip the mint altogether and have a straight up, rich, chocolate milkshake…I mean, healthy green smoothie…..which seriously tastes like a milkshake.

The dates must be medjool. I tried using other dates, and they just aren’t sweet enough. I had some difficulty finding these at my store, so I ordered

Ingredients

  • 4 pitted medjool dates

  • 1 cup unsweetened coconut milk with vanilla

  • 1/2 small ripe avocado

  • 1 handful baby spinach

  • 10 fresh mint leaves (or 1/4 tsp mint extract)

  • 2 tsp all natural cocoa powder

  • 1/2 tsp vanilla (I like VAIN irish vanilla drops in this recipe)

  • 1 cup ice cubes

Directions

  • Blend everything except the ice cubes until smooth.
  • Add the ice cubes and blend for a second time.

Notes

  • Medjool dates are a must! Other dates are not sweet enough.
