Ginger Peach Smoothie

Today, the weather is pretending it’s summer and it made me think of one of my favorite summer fruits. PEACHES!!!

It won’t be peach season here in KC for another month or two, so I had to make do with some frozen peaches purchased at the store. And that’s OK, because the peaches still tasted delightful in this refreshing smoothie, and it reminded me how much I have to look forward to when my local peach farm has peaches for me to pick!

Ginger and peach go together like peanut butter and chocolate. Perfection. Ginger is also a great ingredient for smoothies because it has anti-inflammatory properties, promotes healthy digestion, and can even reduce nausea.

Fresh ginger is best in this smoothie, so I use a couple shortcuts to enhance the ginger flavor. The first is to use fresh ginger paste. I find this in the produce section of the store. It’s great for when you don’t have a ginger root lying around, or just don’t want to peel and grate the root yourself. All the flavor and health benefits are still in that handy little tube. Another trick is that I use a vanilla extracted in ginger spirits by VAIN Foods. The vanilla is lovely with the peaches, and the extra kick of ginger deepens that crisp ginger flavor in the smoothie.

I always make this smoothie with greens, but you can leave them out if you want your peach smoothie to look peachy.

Ingredients

  • 1/2 medium frozen banana

  • 1/2-1 cup Baby spinach (I do a handful)

  • 1 cup frozen slices peaches

  • 1 cup unsweetened almond milk with vanilla

  • 1/4 cup water

  • 1/2 tsp vanilla (I like VAIN Indonesian vanilla extracted in ginger spirits for this smoothie)

  • 1/4 tsp fresh ginger paste, or fresh grated ginger

  • 1 tsp coconut oil

Directions

  • Combine all ingredients in a blender and blend until smooth.
